Peach Melba has always had a certain charm to it, soft, juicy peach paired with the sharp sweetness of raspberry, all coming together in one of those flavour combinations that just works. We wanted to take that familiar dessert pairing and turn it into something you could sip instead.
So we started with raspberry coulis around the glass, added peach for that mellow fruitiness, and finished it with our Pink Matcha for a soft, rosy twist. The result is creamy, fruity and a little nostalgic, but still fresh enough to feel like a modern café drink.
It’s the kind of recipe that feels playful at first glance, then wins you over with how well the flavours actually come together.
Ingredients
4–5 g Nebula Herbal Pink Matcha
2 pumps peach syrup (around 15–20 ml)
Raspberry coulis, for the inside edge of the glass
150–180 ml milk
25–30 ml water, for whisking the Pink Matcha
1 cup ice
Optional
Fresh peach slice
Fresh raspberries
Step 1 – Prepare the glass
Drizzle a small amount of raspberry coulis around the inside edge of the glass. Let it fall naturally down the sides so you get those beautiful raspberry streaks rather than coating the whole glass.
Fill generously with ice.
Step 2 – Add the peach
Pour 2 pumps of peach syrup into the glass. Add the chilled milk, leaving enough room at the top for the Pink Matcha.
Give it one gentle stir so the peach flavour begins to blend through the milk without completely disturbing the raspberry coulis.
Step 3 – Prepare the Pink Matcha
Add 4–5 g Nebula Herbal Pink Matcha to a small bowl or cup. Pour in around 25–30 ml water and whisk until smooth and completely combined.
Step 4 – Build the drink
Slowly pour the prepared Pink Matcha over the iced peach milk.
The raspberry coulis should remain visible around the edges while the Pink Matcha creates a soft pink finish through the centre of the drink.
Step 5 – Finish and serve
Add a thin peach slice or a couple of fresh raspberries if you want a simple garnish.
Serve immediately while cold.
Give it a gentle stir before drinking to bring together the peach, raspberry and Pink Matcha flavours.
Why Peach & Raspberry Work So Well
Peach brings a soft, mellow sweetness, while raspberry adds just enough tartness to keep the drink from becoming overly sweet. Together with the fruity character of Pink Matcha, you get something creamy, refreshing and almost dessert-like — without feeling too heavy.
Make It Your Own
For a stronger peach flavour, add another small pump of syrup.
Prefer something sharper? Add a little more raspberry coulis. For a lighter version, use oat or almond milk and keep the syrup slightly lower.
